I am not in California, so I can’t answer a some of them.
I do know a lot of demolition contractors, just get a full general contractors license. But I believe in California, you need to carry a demolition contractor’s license also. Maybe one of the California guys can chime in.
For demolishing a house, you will probably need a demo permit and a good faith survey. All hazardous materials must be removed prior to any demolition. Each city and county maybe different with permits, so I would check with each individual city that you plan to do work in.

The "basic" things you will need to start:
A good business plan, review it every 6 months
Contractor’s License
Business License
Bonding
Liability Insurance
A good Attorney, to review documents/contracts
And a good banker
In California, you will also need to take an examination to receive your contractor’s license.
I have no idea on insurance cost; it varies from state to state and company to company.
Also I would recommend putting a “mini” board together of some of your peers, even if they are not in the business, to help and guide you along.
